Madras Curry

Total time: 50 minutes

Ingredients

  • 400g of chicken, cut into cubes
  • 400g can of chopped tomatoes
  • 1 onion, diced
  • 5 tbsp of tomato sauce
  • 1 lime
  • 2 tsp of garam masala
  • Chopped parsley
  • 3 tbsp of olive oil
  • 1 tsp of cumin
  • 1 tsp of chilli powder
  • 1 tsp of turmeric
  • 1/2 tsp of black pepper
  • 150ml of water

Instructions

  1. Heat a frying pan with the olive oil and fry the chicken for five minutes. Remove the chicken from the pan and set it aside.
  2. Fry the onions for five minutes, then add the cumin, chilli powder, turmeric and black pepper. Fry for another five minutes.
  3. Add the tomatoes and tomato sauce, then bring the sauce to a boil and simmer for ten minutes.
  4. Add the chicken back into the pan, and add 150ml of water. Boil the ingredients, cover the pan with a lid and simmer gently for ten minutes.
  5. Squeeze a lime into the pan, then add the garam masala and the parsley. Simmer for another ten minutes.
